Choosing Recipes Mom Will Love on Her Special Day

Baking It Yourself

The “Flower Power” cake in the photo is by FamilyFun.com and can easily be created using two store-bought boxes of cake (try Funfetti cake mix and use white icing). One box would be used for the 13"x9" sheet cake and the other mix would be used for the four cupcakes and five mini cupcakes that make up the flowers on the top of the cake. Simply choose your own brightly colored cute candies (like Nerds, Skittles, mini M&Ms etc), colored sugars and sprinkles. The leaves can be made from spearmint leaves, or use candy spearmint leaves or green Fruit Roll-Ups cut to resemble leaves. Pipe green tube icing for the stems. This is a great cake for kids to make their mom on Mother’s Day.

Crystallized Sugar Pansies

Many flowers are edible, like nasturtiums, which have a peppery flavor, and pansies. You could make simple cupcakes in Mom’s favorite flavor, but then add crystallized sugar pansies on top for a beautiful look she’s sure to love. Pick pansies in several colors, rinse them well. Dip in ice water to freshen, then let them dry on a paper towel. In a small bowl, mix pasteurized, powdered egg whites or meringue powder with warm water and stir slowly. While holding the flower or petal with tweezers, apply a thin layer of egg white mixture with a small paintbrush in a thin, even layer to all sides of the flower (uncoated areas will turn brown). Hold each flower over a bowl and sprinkle or shake superfine sugar from a clean salt shaker over the entire flower. Place on parchment paper to dry for at least two hours before adding to iced cupcakes.
